I kg gooseberries
A little water
500g sugar
Citric acid (10g per litre)
Place gooseberries in a heavy based pan with just enough water to cover the base of the pan. Heat gently till the gooseberries break down to a pulp and release their juice. Add sugar and continue to heat until all sugar is dissolved.
Strain through a jelly bag or muslin then add 10g citric acid per litre of liquid.
Bottle hot to preserve. To use dilute to taste.
